Vanilla biscuits are a great staple recipe, whether its for an afternoon snack, a treat for the kids or homemade gifts this recipe works everytime.
With a 3 inch circle cutter this recipe will produce approx 20 biscuits (5mm thick)
Ingredients
300g Plain Flour
50g Baking Spread (ie stork)
100g Unsalted Butter
150g Caster Sugar
1 medium eggs
1/2 tsp vanilla
Method
1. I always weigh out all my ingredients before I start
2. Put your flour, baking spread and unsalted butter into the food processor bowl, caster sugar into a second bowl and crack your eggs into a glass, if you find this messy try a small bowl instead
3. Blitz the flour, baking spread and unsalted butter together until it resembles sand
4. Add in your sugar, eggs and vanilla and mix until it starts to come together
5. Empty onto the worktop and kneas until it becomes smooth and forms a ball
6. Wrap in cling film and pop in the fridge overnight, if you dont have time then a minimum of 2 hours
7. Turn the oven on - 180°C
8. Lay out two cookie trays with a sheet of greaseproof paper on each
9. Sprinkle plain flour on the worktop and roll out your dough. I use 5mm fondant spacers to make sure all my biscuits are the same thickness
10. Use a circle cutter to cut out your biscuts. I use a 3inch circle cutter and get around 20 biscuits
11. Place you biscuits on the prepared trays leaving space between them
12. Bake for 12 minutes
13. Once baked run over with a cake smoother to flatten the biscuits
14. Slide the greaseproof paper off the trays and allow to cool on a flat surface
