Duffins are a cross between a muffin and a donut, super simple to make, no specialist equipment needed.
You can make these with only a bowl, a jug (or large glass), a wooden spoon, a teaspoon and cupcake or muffin cases.
Its really easy to change the flavours, just swap the flavour of jam you are using, or don't use jam and use your favourite spread. Nutella duffins.... yum! Biscoff duffins...double yum!!
My brothers favourites are the ones with raspberry jam, my dad goes for an apple sauce centre and a little bit of cinnamon in the sugar topping.
Ingredients
- 125ml milk (either whole or semi skimmed)
- 85ml vegetable oil
- 1 large egg (if you can only get medium that’s fine)
- 1/2 tsp vanilla
- 200g self raising flour
- 100g caster sugar
- 12 tsp of jam or your favourite spread
Topping
- 100g unsalted butter
- 100g granulated sugar
Method
- Preheat the oven to 190 degrees fan, 200 non fan or gas mark 5
- Put flour and sugar in one bowl (dry ingredients)
- Put milk, oil, egg and vanilla into jug/glass (wet ingredients)
- Pour the wet ingredients into the bowl with the dry ingredients and gently mix until all the flour has disappeared, as soon as this happens STOP, you don’t want to over mix
- Put one tablespoon of mixture into each cupcake cake (I usually get between 7 and 8 from this mix, based on cupcake cases with a 50mm bottom)
- Put on teaspoon of jam in the centre of each duffin
- Top with a further tablespoon of duffin mix, make sure you can’t see any of the jam
- The cupcake cases should be around 3/4 full
- Put in the oven for 20 mins, check after 17 minutes if using smaller cases
- The duffins should have risen and be golden brown, press gently on the top to ensure they bounce back, if so they are ready, if not put back in the oven for 2 minutes at a time, remember to set a timer!
- Melt the butter in the microwave, or in a pan on the hob.
- Place the granulated sugar in a bowl
- Take each duffin and dip into the melted butter, try not to get the cupcake case wet, then dip immediately in the sugar. Repeat for each duffin
- Enjoy.... these are best eaten on the day they are baked, they don’t store particularly well
